Easy to make, pretty to look at and delicious, these Piquillo Peppers are just perfect as a small bite. Serve with Spicy Spanish Mushrooms and a few slices of Gateau Salé with hot honey.
Ingredients
- 3 1/2 oz goat cheese
- 1 tbsp finely minced fresh chives
- 1 tbsp finely minced fresh mint
- 1 tbsp lemon juice
- 1 pinch red pepper flakes
- kosher salt and freshly ground black pepper
- 2 medium red roasted peppers
- chives and mint for garnish
Instructions
Gather all ingredients before starting the recipe.
- In a small bowl, combine 3 1/2 oz goat cheese, 1 tbsp finely minced fresh chives , 1 tbsp finely minced fresh mint, 1 tbsp lemon juice, 1 pinch red pepper flakes and kosher salt and freshly ground black pepper. Stir to combine.
- Separate 2 medium red roasted peppers into 4 segments.
- Place about 1 tsp of cheese on each segment and roll up the pepper. Refrigerate the rolled up peppers for a few hours before serving.
- Cut each rolled up pepper into 1" rounds, garnish with chives and mint.
