Easy to make, pretty to look at and delicious, these Piquillo Peppers are just perfect as a small bite. Serve with Spicy Spanish Mushrooms and a few slices of Gateau Salé with hot honey.

Piquillo Pepper and Chevre Bites

Ingredients 

  • 3 1/2 oz goat cheese
  • 1 tbsp finely minced fresh chives
  • 1 tbsp finely minced fresh mint
  • 1 tbsp lemon juice
  • 1 pinch red pepper flakes
  • kosher salt and freshly ground black pepper
  • 2 medium red roasted peppers
  • chives and mint for garnish

Instructions

Gather all ingredients before starting the recipe.

  • In a small bowl, combine 3 1/2 oz goat cheese, 1 tbsp finely minced fresh chives , 1 tbsp finely minced fresh mint, 1 tbsp lemon juice, 1 pinch red pepper flakes and kosher salt and freshly ground black pepper. Stir to combine.
  • Separate 2 medium red roasted peppers into 4 segments.
  • Place about 1 tsp of cheese on each segment and roll up the pepper. Refrigerate the rolled up peppers for a few hours before serving.
  • Cut each rolled up pepper into 1" rounds, garnish with chives and mint.
