Ingredients 

  • 1 lb pork belly

Pork Belly Seasoning

  • 1 1/2 tsp kosher salt
  • 1 1/2 tsp garlic powder
  • 1 1/2 tsp smoked paprika
  • 1/2 tsp cayenne pepper
  • 1/4 tsp ground cinnamon
  • 1/2 tsp ground cumin

Tortillas

  • reserved fat from pork belly
  • reserved meat jelly from pork belly
  • 8 flour tortillas
  • 2-3 sprigs chopped cilantro for garnish
  • pickles, hot peppers, fresh tomatoes

Instructions

Gather all ingredients before starting the recipe.

  • Pre heat oven to 200℉
  • Trim pork belly of rind if any, and lightly score the top of the pork belly.
  • Combine 1 1/2 tsp kosher salt, 1 1/2 tsp garlic powder, 1 1/2 tsp smoked paprika, 1/2 tsp cayenne pepper, 1/4 tsp ground cinnamon, and 1/2 tsp ground cumin in a small bowl.
  • Rub the seasoning into all sides of the pork belly and wrap in aluminum foil, twice.
  • Set the wrapped pork belly in an oven proof baking dish and place the dish in a preheated oven. Set your timer to 6 hours.
  • After 6 hours, remove pork belly and allow it to come to room temperature. Transfer the pork belly in its baking dish to the refrigerator and cool for 6 to 10 hours, or overnight.

Serving

  • Remove foil from pork belly, reserving the fat and the meat jelly and allow the pork 20 minutes to come to room temperature.
  • Slice the pork into 1/2" slices, then slice again into 1/2" cubes.
  • Heat a medium skillet over medium high heat for 2-3 minutes. Remove skillet from heat and add about 1 tbsp of the reserved fat. Return skillet to heat, then add the cubed pork belly.
  • Sauté the pork belly, turning after 2-3 minutes until all sides of the pork are a golden brown. Add the meat jelly to the pan and mix until melted and bubbly.

Tortillas

  • Microwave 8-10 tortillas placed between 2 sheets of paper towel on high for 1 minute.
  • Place a generous portion of the pork belly on each tortilla and serve with your favorite garnish.
