Are you stuck for a colorful and delicious side dish? Try this Red Pepper and Spring Pea Curry, it is incredibly fast to prepare and is perfect with chicken, sausage or fish. I served it with pan seared lamb chops, what a treat.
Tip : You can substitute all of the spices with a store bought good curry powder instead.
Ingredients
- 1/2 red bell pepper finely diced
- 1/2 small onion finely diced
- drizzle of olive oil
- 1/2 tsp ground cumin
- 1/2 tsp ground turmeric
- 1/2 tsp ground corriander
- 1/2 tsp garam masala
- 1/2 kosher salt
- 1/4 tsp ground black pepper
- 1 cup frozen spring peas
Instructions
Gather all ingredients before starting the recipe
- Heat a drizzle of olive oil in a mediaum skillet over medium high heat.
- Add 1/2 red bell pepper and 1/2 small onion finely diced and sauté until the onions and the peppers are soft, about 4 minutes.
- Add 1/2 tsp ground cumin, 1/2 tsp ground turmeric, 1/2 tsp ground corriander, 1/2 tsp garam masala, 1/2 kosher salt and 1/4 tsp ground black pepper and stir to combine.
- Add 1 cup frozen spring peas and stir to combine. Cook until the peas are warmed through and the water from the frozen peas has mostly evaporated.
