This Souvlaki Marinade is remarkably versatile and delicious! So much so that I created this separate recipe for it because I used it in so many ways. I used it to dress a Greek Salad, to marinate pork for Souvlaki and added it to left over pork belly and souvlaki tartines.   It lasts well refrigerated for 2-3 weeks.

Ingredients 

  • 3 tbsp white wine vinegar
  • 5 tbsp olive oil
  • 6 cloves grated garlic
  • 1 tsp Dijon mustard
  • 2 tsp dried oregano flakes
  • 1 sprig finely chopped fresh rosemary
  • 1 tsp sweet Hungarian paprika
  • 3/4 tsp fresh ground black pepper
  • 1 1/2 tsp kosher salt
  • 1 medium lemon
  • 1/2 medium red onion quartered

Instructions

  • Combine 3 tbsp white wine vinegar, 5 tbsp olive oil, 6 cloves grated garlic, 1 tsp Dijon mustard, 2 tsp dried oregano flakes, 1 sprig finely chopped fresh rosemary, 1 tsp sweet Hungarian paprika, 3/4 tsp fresh ground black pepper and 1 1/2 tsp kosher salt in a small bowl. Mix to combine.
