This Stir Fried Asparagus and Mushroom recipe is a simple vegetable and vegetarian dish. Easy to make with fresh seasonal vegetables, or just as I have shown. You can make this in any quantity, so it is good for one to twenty one, and it’s calorie friendly.
Ingredients
- 1 bunch asparagus thick stemmed is better, sliced diagonally
- 10-12 whole shitake mushrooms sliced
- 1 small knob fresh ginger peeled and julienned
- 1 clove garlic thinly sliced
- 1 tbsp vegetable oil
Vegetable Seasoning
- 2 tbsp mirin or Shaoxing wine
- 1 tbsp soy sauce
- 1 tspn brown sugar
- 5-6 sprigs fresh coriander
Instructions
- Gather all ingredients before starting recipe.
- Combine all ingredients in vegetable seasoning and set aside until ready to use.
- Heat oil in a medium skillet over medium high heat for 1 minute and add julienned ginger and sliced garlic, stir to combine, cook for 1-2 minutes.
- Add sliced mushrooms and asparagus and stir to combine, 2-3 minutes.
- Add vegetable seasoning, stir to combine, and cook for another 2-3 minutes.
- Garnish with fresh cilantro.
