Stir Fried Asparagus with Shitake Mushrooms

Ingredients 

  • 1 bunch asparagus thick stemmed is better, sliced diagonally
  • 10-12 whole shitake mushrooms sliced
  • 1 small knob fresh ginger peeled and julienned
  • 1 clove garlic thinly sliced
  • 1 tbsp vegetable oil

Vegetable Seasoning

  • 2 tbsp mirin or Shaoxing wine
  • 1 tbsp soy sauce
  • 1 tspn brown sugar
  • 5-6 sprigs fresh coriander

Instructions

  • Gather all ingredients before starting recipe.
  • Combine all ingredients in vegetable seasoning and set aside until ready to use.
  • Heat oil in a medium skillet over medium high heat for 1 minute and add julienned ginger and sliced garlic, stir to combine, cook for 1-2 minutes.
  • Add sliced mushrooms and asparagus and stir to combine, 2-3 minutes.
  • Add vegetable seasoning, stir to combine, and cook for another 2-3 minutes.
  • Garnish with fresh cilantro.
