Ingredients
  • 1 bunch asparagus thick stemmed is better, sliced diagonally
  • 10-12 whole shitake mushrooms sliced
  • 1 small knob fresh ginger peeled and julienned
  • 1 clove garlic thinly sliced
  • 1 tbspn vegetable oil
Vegetable Seasoning
  • 2 tbspn mirin or Shaoxing wine
  • 1 tbspn soy sauce
  • 1 tspn brown sugar
  • 5-6 sprigs fresh coriander

Instructions
  1. Gather all ingredients before starting recipe.
  2. Combine all ingredients in vegetable seasoning and set aside until ready to use.
  3. Heat oil in a medium skillet over medium high heat for 1 minute and add julienned ginger and sliced garlic, stir to combine, cook for 1-2 minutes.
  4. Add sliced mushrooms and asparagus and stir to combine, 2-3 minutes.
  5. Add vegetable seasoning, stir to combine, and cook for another 2-3 minutes.
  6. Garnish with fresh cilantro.
