The Perfect Chicken Sal Sandwich happened because I had a half of a rotisserie chicken in the fridge, and I wanted to transform it somehow. I had already made a salad, so it was time for a sandwich. I went outside of the nine dots a bit by adding more than just S&P, mayo and celery, and I think it tasted very good. The kettle chips on top of the chicken salad were just fun and added that crunch we all like.
Tip : I don't like onion in my chicken salad so I have not included it, but if you like it add 1/2 finely chopped yellow or spring onion to the salad.
Ingredients
- 1/2 rotisserie chicken, de-boned and shredded
- 1/2 tbsp Old Bay seasoning (optional)
- 1/2 tspn garlic powder
- 1/2 tspn onion powder
- 1/2 tspn celery salt
- 3/4 cup celery, finely sliced
- 3 whole hardboiled eggs, chopped
- 2 tbsp sweet relish
- 3/4 cup Hellman's Mayonaise
- 3-4 sprigs fresh parsely, finely chopped
- kosher salt
- freshly ground black pepper
- 2 brioche buns
Garnish
- 5-6 kettle chips as garnish or as a topping for the sandwich
Instructions
- Gather all ingredients before starting the recipe.
- Combine all ingredients in a medium mixing bowl. Mix using a fork, until all ingredients are combined.
- Split two brioche buns in half. Add chicken salad mixture to the bottom of the bun,
- Top chicken salad with kettle chips or serve on the side. Add top half of brioche and serve.
