Friends recently asked if I could include some ‘vegetarian‘ recipes on my website.

There are many definitions of vegetarian but one that seems to sum it all up defines it as a diet free of meat, fish, and fowl flesh.

Since I am not a vegetarian, this is not really the focus of my cooking but, with a little imagination, and without diminishing the taste of the recipe, I could easily identify some of my dishes which could be prepared as a vegetarian main course. Also, I’ve noticed that some vegetarians will eat fish and shellfish, chicken, cheese and eggs, in which case, just make the dish as called for in the recipe.

A quick search for Vegetarian’ on my Recipe Page Search Bar yielded a list of 20 or

more recipes, and I know that there are many more, but they may require a little imagination. And to be fair, I have labeled some of these recipes vegetarian as it is easy to omit the meat portion of the recipe.

Here are a few of the recipes that you will find by searching ‘vegetarian’;

Mushroom and Caramelized Onion Pizza

Charred Asparagus, Fennel, Apple and Greens

Sweet and Peppery Caramelized Cabbage Pasta

Roasted Broccoli, Red Onion and Grape Salad

Warm Tuscan Farro Salad

Roasted Cauliflower Steaks

There are many more, and I will add the ‘vegetarian’ category to new recipes as I add them to my website. If the recipe includes ingredients which are not vegetarian, I will add a note regarding substitutions. Hope this helps and enjoy!
