I’ve heard that the classic St. Patrick’s Day menu is basically “all potatoes, all the time.” Honestly, that tracks, the Irish do have a legendary love affair with the humble spud. And as someone who has published more than 100 potato recipes myself, I’d say I’m proudly carrying that torch, and I am not even Irish! If loving potatoes is a tradition, I’m absolutely upholding it.
But in the spirit of fairness, and festivity, I also picked up a brisket so I can make my beloved corned beef, potatoes, and pickles. So yes, there will be potatoes… but there will also be a few of my other favorites joining the celebration.
