This is a humble, easy and delicious side dish. Yes you could have served the peas on the side, but combining the peas, potatoes and parsley just elevates the dish a little bit. A perfect side dish with braised beef ribs.

  • 2-3 white potatoes cut into 1/2" dice
  • 1-2 tbspn unsalted butter
  • 3/4 cup frozen peas
  • 3-4 sprigs parsley chopped
  • kosher salt and freshly ground pepper to taste

  1. Gather all ingredients before starting recipe.
  2. Cut 2-3 white potatoes into half and then into quarters, no need to peel. Put into a medium sauce pan, rinse under cold water then cover with water. Add salt, and bring to a boil, reduce heat to a firm simmer and cook for 15-20 minutes, or until the potatoes are firm tender.
  3. Chop parsley and set aside.
  4. Heat butter in a medium skillet over medium heat, and add drained cooked potatoes. Toss gently to coat the potatoes in butter. Season with salt and pepper.
  5. Add frozen peas, stir to combine with potatoes and allow to heat through for 3-4 minutes.
  6. Add chopped parsley, toss to combine and serve,
