Finely chopped shallots sautéed in olive oil and butter until they are soft and sweet, make a great topping for Bavette Frittes, Fllat Iron Steak or skirt steak,
Peel and finely chop 5-6 large shallots.
Melt 2 tablespoons of butter and a tablespoon of olive oil in a frying pan and add chopped shallots. Cover and cook over medium heat until the shallots become translucent, about 15 minutes. Set aside until the steaks are grilled and are ready to be served.
Return cooked shallots to very low heat to warm.
