This Grilled Baguette with Fresh Tomato Rub is a simple, classic Italian side with a small twist. Traditionally, the toasted bread is rubbed only with a ripe tomato, but I like it better when the warm baguette gets a swipe of garlic first, then the tomato, and finally a sprinkle of sea salt. So good.

Ingredients 

  • 1 demi baguette
  • 2 cloves garlic peeled
  • 1 whole vine ripened tomato
  • olive oil to drizzle
  • sea salt to sprinkle

Instructions

  • Gather all ingredients before starting recipe
  • Slice Baguette on an angle, drizzle with olive oil and place on a pre heated grill, toast for 2-3 minutes per side,
  • Rub toasted baguette slices with peeled garlic clove and the with a cut tomato half

Serving

  • Place slices of baguette in a bowl or on a platter and add the other half of the tomato for garnish
