Red Onion Jam is a condiment and you can make it while you were doing other things. It’s easy as it cooks by itself under a lid for about 30 minutes and then simmers uncovered for maybe another 30 minutes. It does not require a lot of attention. It keeps well in the fridge and is delicious on grilled steaks. It just adds a bit of a kick.

Ingredients 

  • 3 medium red onions peeled and sliced
  • 2 tbsp olive oil
  • kosher salt and black pepper
  • 1/2 cup red wine vinegar
  • 1/4 cup sugar

Instructions

  • Gather all ingredients before starting recipe.
  • Peel onions, cut in half, then slice into 1/2" thick slices.
  • Heat olive oil in a medium sauce pan with a lid over medium high heat. Season with kosher salt and freshly ground black pepper.
  • Cook on medium heat, with the lid on for about 25-30 minutes, or until the onions are soft.
  • Add vinegar and sugar, stir to combine, reduce heat to medium low, and simmer the onions until syrupy and jam-like. Let cool.
  • Spoon the jam into a resealable jar and store in the fridge.
