I’m guessing that this cake is called Lightening Cake because it is lightening fast to make. None of the three ingredients in the cake require more than 5 minutes to prepare…and the cake is delicious!
Ingredients
- 1 recipe Sponge Cake
- 1 recipe Simple Chocolate Butter Cream Frosting
- 1 recipe Easy Baked Meringue
Instructions
- Prepare the recipes per the instructions.
- Cut cooled cake in half and spread with chocotale cream in the center and on top.
- Top with meringue and serve.
Author Notes
I was pleasantly surprised when I found that that this cake refrigerated without changing the consistency of the meringue. I just covered the cake with cling wrap and placed it in the refrigerator. The fact that you can do this means that you can easily make the cake, including the meringue, a day or two before serving and the cake will be perfect. Just take the cake out of the refrigerator a half hour before serving.
