Ingredients 

  • 2 medium Yukon gold or yellow potatoes
  • 1/2 large sweet onion thinly sliced
  • 1 tbsp unsalted butter
  • 1/2 tbsp canola oil
  • kosher salt
  • 3-4 sprigs fresh parsley finely chopped

Instructions

  • Gather all ingredients before starting the recipe.
  • Thinly slice potatoes, no need to peel. Rinse under running water, then drain the potatoes and cover with cling wrap. Microwave on high for 2-3 or minutes or just until par-cooked. Drain and set aside until ready to use.
  • Heat butter and oil in a medium skillet over medium high heat. Add sliced onions, season with kosher salt and cook, stirring occasionally, until the onions begin to caramelize, about 10 minutes.
  • Add par-cooked potatoes, season with kosher salt and gently toss with the caramelized onions. Cook, undisturbed for about 5-7 minutes, or until the potatoes begin to brown, then using a spatula, flip the potatoes over and cook for another 5 minutes.
  • Sprinkle with finely chopped parsley and serve.
