- 8 strips bacon
- 1 lb whole trimmed pork tenderloin cut in half
- kosher salt and freshly ground black pepper to taste
- vegetable spray
- 2 tbsp maple syrup
- 1 recipe Roasted Red Apples and Onions
Instructions
- Gather all ingredients before starting recipe.

- Cut 1 lb whole trimmed pork tenderloin in half, season with kosher salt and freshly ground black pepper to taste and wrap each half with 4 strips bacon.

- Spray a medium sized skillet with vegetable spray and heat over medium high heat for 1-2 minutes. Add wrapped tenderloin halves and sear for 3 minutes without disturbing.

- Flip the tenderloin and sear for another 4 minutes, turn to sear the sides for another minute per side until all sides are golden for medium rare slices of tenderloin or check the internal temperature, 145°F (63°C). Remove to a plate and baste with 2 tbsp maple syrup and allow to rest for about 10 minutes before slicing.
