Ingredients
Gather all ingredients before starting the recipe.
- 2 fillets cod skinless
Glaze for Cod
- 1-2 tbsp marmalade
- dash of water to make it spreadable
- 1 tsp brown sugar
- kosher salt to taste
Sauce
- 4 tbsp Hellman's mayonnaise
- 3 tsp apple cider vinegar
- 1 tsp Dijon mustard
- 4-5 sprigs fresh parsley chopped
- kosher salt to taste
Garnish
- 1 whole orange quartered
- fresh parsley leaves
Instructions
Gather all ingredients before starting the recipe.
Glaze
- Mix together 1-2 tbsp marmalade, a dash of water to make it spreadable and 1 tsp brown sugar and set aside until ready to cook cod.
- Season cod and set aside until ready to cook.
Cooking Cod
- Spread marmalade glaze on all sides of the cod.
- Heat a small skillet over medium high heat.
- Add cod fillets to hot skillet and cook for 2-3 minutes or until the cod gets a golden-brown color.
- Flip to cod and cook for another 2-3 minutes or until the cod flakes easily with a fork and is a golden-brown
Sauce
- Mix 4 tbsp Hellman's mayonnaise, 3 tsp apple cider vinegar, 4-5 sprigs fresh parsley, Dijon mustard and any remaining marmalade in a small saucepan.
- Heat over low heat while cooking the cod.
Serving
- Spoon a layer of sauce in the center of a serving plate, top with seared cod, garnish with orange segments and parsley leaves.
