This recipe for meatloaf is mostly about the presentation rather than the preparation. Meat loaf is pretty basic to make, ground meat, egg, bread, salt and pepper. I think that the presentation of this meatloaf is great though. I added Homemade Mash Potatoes and canned peas, and it made a really tasty weeknight dinner.  Just to spruce it up, I topped the meatloaf with my BBQ Sauce for Ribs.

Ingredients 

  • 1 1/2 lb ground beef or ground beef veal and pork
  • 1/2 medium Spanish onion finely chopped
  • 1 whole egg
  • 2-3 slices stale day old baguette or burger buns
  • 1 tbsp Worcestershire sauce
  • 4 tbsp Bull's Eye BBQ Sauce divided
  • kosher salt and freshly ground black pepper

Instructions

Gather all ingredients before starting recipe.

  • Pre heat oven to Convection Oven375 °F
  • Soak 2-3 slices stale day old baguette or burger buns under running water, squeezing the water out of the bread. When the bread has been soaked and the water squeezed out, add to a medium sized mixing bowl.
  • Combine 1 1/2 lb ground beef or ground beef, beef and pork, 1/2 medium Spanish onion, finely chopped, 1 whole egg 1 tbsp Worcestershire sauce2 tbsp Bull's Eye BBQ Sauce and season with kosher salt and freshly ground black pepper. Using your hands, combine all of the ingredients to make sure that they are evenly distributed and well blended.
  • Spread the meat loaf mixture in a 9"x 9" casserole dish, spreading the meat loaf mixture all the way to the sides.
  • Top the meatloaf mixture with Bull's Eye BBQ Sauce and spread evenly.
  • Bake in a pre heated oven for 45 minutes, or until the meat loaf is bubbling and the topping has nicely browned.

Serving

  • Serve with Homemade Mash Potatoes and canned peas.
