Miso and the maple syrup are the key ingredients in this recipe. But, the original recipe also included mirin and sake. You may have mirin in your pantry as it lasts a long time, but sake is less likely. If you plan ahead, you could include these two ingredients, but honestly, using the substitutions in the ingredients list will not make a discernable difference.

Tip : You can substitute white wine or chicken stock for sake and seasoned rice vinegar for mirin.

Ingredients 

  • 3 tspn hoisin or oyster sauce
  • 1/3 cup white wine or chicken stock or sake
  • 1/3 cup light soy sauce
  • 2 tbsp seasoned rice wine vinegar or mirin
  • 1 tbsp white miso paste
  • 4 tbsp maple syrup

Instructions

  • Gather all ingredients before starting recipe.
  • Combine all marinade ingredients in a small saucepan over medium-high heat. Whisk until the miso has dissolved and the sauce has reduced by 1/3. Remove from heat and bring to room temperature.
