Ingredients 

  • 1 recipe Seared or Grilled Pork Tenderloin
  • 12 small Yukon gold potatoes
  • 1 lb green beans
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 6 cloves thinly sliced garlic
  • kosher salt and freshly ground black pepper

Instructions

Gather all ingredients before starting the recipe.

  • Prepare Pork Tenderloin and set aside to rest for 10 minutes while preparing the side dish
  • Slice 12 small Yukon gold potatoes into 1/4" slices, place in a microwave dish, rinse under cold runing water, cover with cling wrap, and cook on high in your microwave for about 5 minutes, or until firm tender
  • Trim 1 recipe Seared or Grilled Pork Tenderloin and place in a microwave safe dish. Rinse under cold water, cover with cling wrap and cook on high for 2 minutes in your microwave or until the beans are firm tender
  • Add 2 tbsp butter and 1 tbsp olive oil to a medium sized skillet over medium heat. Add 6 cloves thinly sliced garlic and sauté until the garlic has softened but not browed, about 2 minutes.
  • Add cooked and drained vegetables to garlic and butter. Season with kosher salt and freshly ground black pepper and toss to combine.
  • Slice tenderloin into 1" slices and serve with garlic potatoes and green beans.
