There are certain meals which I knowingly make anticipating that there will be enough left to create a delicious lunch the next day. Petit Tender is one of those dishes. Not only is the dish remarkably good freshly made, but it also turns into a very tasty bite for lunch the next day. Just to jazz it up a bit, I served these Perfect Rare Steak bites on crispy garlic toast. A generous sprinkle of black pepper, a touch of salt, and a few juicy red tomatoes rounded out the meal perfectly.
Ingredients
- 6 oz grilled petit tender
- 1/2 fresh demi-baguette
- 1 tbsp butter room temperature
- 2 tbsp olive oil
- 2 cloves grated garlic
- 3-4 sprigs finely chopped fresh parsley
- kosher salt and freshly ground black pepper
- 12-14 small cherry tomatoes
Instructions
Gather all ingredients before starting the recipe.
- Pre-Heat broiler and line a baking sheet with non-stick aluminum foil.
- Cut 6 to 8 slices from 1/2 fresh demi-baguette and slice the grilled petit tender into enough slices to be able to top the baguette slices.
- Mix 1 tbsp butter, 2 tbsp olive oil, 2 cloves grated garlic until well blended. Season with kosher salt and freshly ground black pepper.
- Add 3-4 sprigs finely chopped fresh parsley and then spread the garlic mixture on both side of the baguette slices.
- Transfer baguette slices to baking sheet and place under broiler. Toast until beginning to turn golden, then turn and toast the second side.
- Top the toasted baguette with 1 to 2 slices of petit tender season with kosher salt and freshly ground black pepper and add cherry to tomatoes to garnish.
