Roast Pork Sliders are one of my favorite ways to use up leftover pork roast. After a big dinner, we almost always have extra, and turning those leftovers into something new makes lunch the next day feel special and easy.

Just slice up the leftover pork and stack it onto slider buns. You can keep things simple or add a little flair with BBQ sauce, pickles, or melted cheese. What really takes these sliders to the next level, though, is the slaw. For a quick option, grab a tub of store-bought coleslaw.

Roast Pork Sliders with Three-Cabbage Slaw

Ingredients 

  • 4-6 slices cold roast pork
  • 4 slider buns
  • 2-3 tbsp Garlic Aioli
  • 1 cup vinegar and oil coleslaw
  • kosher salt and freshly ground black pepper

Instructions

  • Slice 1-2 slices of pork roast per slider.
  • Mix aioli or use just plain mayonnaise.
  • Combine coleslaw dressing mix with coleslaw mixture, or use store bought coleslaw.

Assembly

  • Spread aioli on one side of slider bun, top with slices of roast pork, season with salt and pepper than top with coleslaw.
