Spice Rubbed Lamb Lolli Pops are a playful and flavorful twist on classic lamb rib chops. I prefer using small chops and often trim the cap to give them that signature lollipop look, though leaving the cap on adds a rich layer of flavor, and I’ve enjoyed them both ways. Once they’re generously coated in a bold spice rub, you can either grill them quickly, just a minute or two per side, or sear them on your cooktop until they’re beautifully caramelized. These little chops are versatile and satisfying, perfect as the centerpiece of any meal. Serve them with whatever side speaks to you. Crispy French fries, buttery potatoes, seasonal vegetables, or my personal favorite, French lentils, which bring a hearty, earthy balance to the dish. Whether you’re cooking for guests or indulging in a quiet night in, these lamb lolli pops are sure to impress.
