Lunches at my house are often made from the bits and pieces left over from preparing a main course. I usually add a few store‑bought ingredients, like hard‑boiled eggs or won‑ton noodles, because they’re easy additions that round out a salad beautifully. I either make my own dressing or use a trusted store‑bought option.

These Lunch Salads work year‑round, but they’re especially welcome in the summer when you naturally want something lighter.

Ingredients 

  • 1/2 Romain heart
  • 2 hard-boiled eggs
  • 1 cup cubed boiled ham
  • 10-12 cherry tomatoes
  • 1 tbsp Italian dressing
  • 1/2 cup Chinese won-ton noodles
  • 1/3 cup crumbled blue cheese

Instructions

Gather all ingredients before starting the recipe

  • Slice 1/2 Romain heart into 1/2"slices and arrange in the bottom of two deep serving bowls.
  • Quarter 2 hard-boiled eggs and add to romain tucked in between the slices.
  • Scatter 1 cup cubed boiled ham over the lettuce and eggs.
  • Cut 10-12 cherry tomatoes into half and scatter over lettuce, eggs and ham.
  • Drizzle 1 tbsp Italian dressing over the salad and garnish with 1/3 cup crumbled blue cheese and 1/2 cup Chinese won-ton noodles divided between the two plates.
