This dinner was inspired by my mother in-law. We were invited to celebrate my father-in-law’s birthday each December and the menu was always Lasagna, Caesar Salad and Garlic Bread. We jokingly coined this event as her ‘Christmas Lasagna’ dinner. It looked pretty much like mine, but she used to make this for our crowd, her boys and their wives, and eventually, the grandchildren.

It always amazed me how she could extend her table to seat so many. After a while, she would switch things up and started a kids table, still in the dining room, so the grandchildren, almost teenagers, would get their own table. It also saved the rest if us from the silliness of the grandchildren at that age.

Good memories. It was fun to make Christmas Lasagna (her garlic bread was so much better than mine). This was our Christmas Lasagna, celebrated on Christmas Eve this year, maybe also next year.
