I created this recipe from two of my favorites. I used the grilling method from Haitian Style Grilled Chicken, and the Heavenly Sauce form Daddy Wu’s Chinese Chicken. The two combined to make an amazing summer dish!

Ingredients
- 1/2 chicken cut into serving sized pieces bone in, skin on
Marinade
- 1 tbspn dry sherry
- 2 tbspn hoisin or oyster sauce (Asian section of grocery store)
- 1 tbspn light soy sauce
- 1 tspn grated garlic
- 1 tspn grated ginger
Heavenly Sauce
- 1 tbspn olive oil or just enough to thinly coat the bottom of a small skillet
- 1/2 onion red or sweet peeled and thinly sliced
- 10-12 baby plum or cherry tomatoes cut in half
- 1/2 cup ketchup
- 1/4 cup chicken stock
- 2 tbspn brown sugar
- 2 tbspn hoisin or oyster sauce (Asian section of grocery store)
- 1 tspn grated ginger
- 1 large lemon zest and juice

- Gather all ingredients before starting recipe.
Marinating Chicken
- Combine all marinating ingredients and chicken pieces in a plastic bag, seal and message the marinade into the chicken to cover all surfaces. Set aside for two hours to marinate before grilling.
Making Heavenly Sauce
- Heat olive oil in a small skillet over medium heat for 1-2 minutes,
- Add thinly sliced onion to the skillet and cook for 2-3 minutes, or until the onions start to soften.
- Add tomatoes cut in half, stir to combine and cook for 2-3 minutes longer,
- Add ketchup, chicken broth, brown sugar, oyster or hoisin sauce, ginger and lemon zest and juice. Stir to combine well. Reduce heat to medium low and simmer for 10-15 minutes.
Grilling
- Pre heat grill to 500°
- Clean and oil the bbq grates using a pair of tongs and a folded sheet of paper towel generously drizzled with olive oil.
- Remove the chicken pieces from the marinade to a paper towel lined plate and pat dry.
- When the grill has reached 500°, place chicken pieces, skin side down and grill for 6-8 minutes with the grill cover closed. Do not turn the chicken before the time is up.
- After 6-8 minutes, turn the chicken pieces and grill for 8-10 minutes longer with the grill cover closed.
- Turn the chicken to skin side down and check for internal temperature, 165F. If the pieces of chicken are small enough, the chicken should be cooked in 15-20 minutes.
