So simple, so delicious, and so perfectly spring‑like. This Creamy Cannellini side dish comes straight from the ingredients you already have on hand, whether from intentional shopping or just the odds and ends left from a planned meal. I had a bit of each, a handful of broccoli, a can of cannellini beans, and the usual aromatics, garlic, onions, and celery.
A quick char on the broccoli brings out its smoky sweetness, and when it’s tossed with creamy cannellini beans and those soft, fragrant aromatics, something magical happens. The result is an outstanding vegetarian main or a perfect side dish for anything coming off your grill. Fresh, waste‑free, and full of flavor, exactly what spring cooking should be.
