French Green Peas are vibrant, reminiscent of spring and a great side dish with just about any seared or grilled meat but it is especially good with Golden Pan Seared Rosemary Chicken. Frozen peas here are a must, everything else may be substituted.
Ingredients
- 1 tbsp unsalted butter
- 1 cup frozen green peas
- 1 small head Boston lettuce well washed, and drained and sliced into 1/2" ribbons
- 2-3 sprig fresh tarragon rough chopped
- 1/4 onion thinly sliced (use mandolin)
Instructions
- Gather all ingredients before starting recipe.
- Peel and thinly slice 1/4 of a medium onion.
- Melt butter in a medium sized skillet over medium heat and add sliced onion, sauté until the onion becomes translucent, about 4-5 minutes.
- Thinly slice the Boston lettuce and coarsely chop the leaves of 2-3 sprigs of tarragon.
- Add one cup of frozen peas to the onions and cook for 2-3 minutes.
- Add the lettuce and the tarragon, toss to combine, and cook for another 2-3 minutes.
