Jimmy Dean Sausage, Red Sauce and Eggs

Ingredients 

  • 2 whole eggs
  • 1/2 lb Jimmy Dean bulk sausage or Italian sausage
  • 3/4 cup Homemade Red Sauce or jarred red sauce
  • 1/3 green bell pepper cut into strips
  • 1/3 red bell pepper cut into strips
  • 1-2 tbsp soft goat cheese
  • 2-3 sprigs fresh parsley

Instructions

  • Gather all ingredients before starting recipe.
  • Brown 1/2 lb Jimmy Dean bulk sausage in a medium frying pan over medium high heat until lightly browned, drain if needed.
  • Slice 1/3 green bell pepper 1/3 red bell pepper into strips, cut in half and add to sausage and cook with sausage until the peppers lose their crispness, about 4-5 minutes.
  • Spread 3/4 cup Homemade Red Sauce or jarred red sauce or jarred red sauce about an inch thick over the sausage, pepper mixture and turn the heat down to medium and cook until the sauce is warmed through.
  • Top the mixture with small chunks of goat cheese.
  • Using a large spoon, make two wells in the mixture and crack an egg in each well.
    Cover the pan and cook over medium heat for 3-4 minutes, or until the egg whites have set.
  • Garnish with fresh parsley leaves and serve.
