Jimmy Dean Sausage Red Sauce and Eggs

Ingredients 

  • 2 whole eggs
  • 1/2 lb Jimmy Dean bulk sausage
  • 3/4 cup Homemade Red Sauce or jarred red sauce
  • 1/3 red bell pepper cut into strips
  • 1/3 green bell pepper cut into strips
  • 1/3 cup feta cheese crumbled

Instructions

  • Gather all ingredients before starting recipe.
  • Brown Jimmy Dean Sausage in a medium frying pan over medium high heat until lightly browned, drain if needed.
  • Slice red and green peppers into strips, cut in half and add to sausage and cook with sausage until the peppers loose their crispness, about 4-5 minutes.
  • Spread Homemade Red Sauce or jarred red sauce about an inch thick over the sausage, pepper mixture, sprinkle with feta cheese and turn the heat down to medium and cook until the sauce is warmed through.
  • When ready to serve, make a small well in a couple of places in the sauce and break an egg into each well.
  • Cover with a lid and cook over medium heat for about 3 minutes, or until the egg is done, but still soft inside.
  • Spoon the sauce into a shallow dish and top with the egg and more sauce.
