This simple Romaine and Bell Pepper salad is my go-to salad as a side for frittata, savory tarts and even grilled chicken in the summer.
I have also taken the salad into the fall and winter as I serve it with various meat pies and it’s always a great accompaniment. It takes minutes to make and it’s usually the first to be eaten. Once you taste it, you just can’t stop eating until you finish.
Ingredients
- 1 heart of Romaine lettuce sliced into 1/2" ribbons
- 1/4 red bell pepper chopped
- 1/4 green bell pepper chopped
- 1 tbsp Marukan seasoned rice wine vinegar
- 1 tbsp olive oil
Instructions
Gather all ingredients before starting recipe.
- Slice 1 heart of Romaine lettuce into 1-inch ribbons and cut 1 or 2 slices from each of a red and green bell pepper.
- Either slice or dice peppers and combine with the salad greens in a medium mixing bowl and toss with seasoned rice wine vinegar and olive oil.
