This simple Romaine and Bell Pepper salad is my go-to salad as a side for frittata, savory tarts and even grilled chicken in the summer.

I have also taken the salad into the fall and winter as I serve it with various meat pies and it’s always a great accompaniment. It takes minutes to make and it’s usually the first to be eaten. Once you taste it, you just can’t stop eating until you finish.

Romaine and Bell Pepper Salad

Ingredients 

  • 1 heart of Romaine lettuce sliced into 1/2" ribbons
  • 1/4 red bell pepper chopped
  • 1/4 green bell pepper chopped
  • 1 tbsp Marukan seasoned rice wine vinegar
  • 1 tbsp olive oil

Instructions

Gather all ingredients before starting recipe.

  • Slice 1 heart of Romaine lettuce into 1-inch ribbons and cut 1 or 2 slices from each of a red and green bell pepper.
  • Either slice or dice peppers and combine with the salad greens in a medium mixing bowl and toss with seasoned rice wine vinegar and olive oil.
