I love Indian spices, including the tandoori spice I used to make these Tandoori Lamb Chops. Tandoori is a mild aromatic spice with a rich red color. I have used it mostly with chicken, but I thought it would work equally well with lamb chops. I like the result, the chops were slightly charred and had a beautiful color when they were finished. I paired the chops with another perfect vegetable side dish called Tandoori Spiced Green Peas which is very similar to another Indian dish called Aloo Gobi.  Either curry would make a great combination.

Instructions

Gather all ingredients before starting recipe.

  • Season chops with kosher salt and fresh ground black pepper. Coat the chops with 2 tbsp tandoori spice and set aside for up to an hour before cooking.
  • Heat 1 tbsp canola oil in a medium sized skillet over medium high heat until the oil shimmers. Add the spiced chops and sear for 3 minutes per side.
  • Garnish with 1 orange, peeled and sliced.
  • Prepare 2 sheets poppadom according to package directions or place in your microwave for 1 minute until the poppadoms are puffed and crunchy and serve.
