As a child in Hungary, I remember having Creamed Spinach topped with a sunny side egg for lunch. I guess I liked it because I remember eating it. I know I like it now, and I tend to serve it with Hungarian Pork Schitzel, Mini Meatloaf Patties or even Homemade Pork Grilling Sausages. On the other hand, it would probably be good with a sunny side egg too!

Ingredients 

  • 1 package frozen spinach
  • 2 cloves garlic grated
  • 1 1/2 tbsp unsalted butter
  • 1 1/2 tbsp all-purpose flour
  • 1/2 tsp kosher salt or to taste
  • 1 1/2 cup milk

Instructions

  • Gather all ingredients before starting recipe.
  • Defrost frozen spinach in microwave and place in colander to drain.
  • Melt butter on medium heat in a medium sauce pan, add grated garlic making sure that the garlic does not color but becomes soft, about 1 minute.
  • Add flour and stir for a few minutes; the roux should be light colored and is ready when there are bubbles throughout.
  • Slowly add milk, stirring constantly to avoid lumps. Add salt and bring to a boil, then reduce heat to simmer and cook until the sauce has a creamy thick consistency, then add the spinach.
  • Serve as a side with grilled or fried pork chops.
