This cucumber salad is incredibly refreshing and just the right side dish for either fried and saucy dishes. I like to serve at with Chicken or Veal Paprikash or Pork Schnitzel. It is just perfect!
Ingredients
- 1 whole English cucumber peeled and sliced on a mandoline
- 3 tbsp sugar
- 3 tbsp white vinegar
- 1 cup cold water
- 2 tbsp sour cream
- 1/4 tspn kosher salt
- 2-3 sprigs fresh dill finely chopped
Instructions
- Gather all ingredients before starting recipe.
- Peel and slice cucumber on a mandolin or a greater with a slicing side.
- Place sliced cucumber in a bowl and combine with 1/4 tspn kosher salt and after 15 minutes, squeeze out extra juice. Reserve cucumber.
- Combine 3 tbsp sugar, 3 tbsp white vinegar, 1 cup cold water and 2 tbsp sour creamStir until the sugar has completely dissolved.
- Combine vinegar mixture with reserved cucumber and chopped dill.
