This cucumber salad is incredibly refreshing and just the right side dish for either fried and saucy dishes. I like to serve at with Chicken or Veal Paprikash or Pork Schnitzel. It is just perfect!

Ingredients 

  • 1 whole English cucumber peeled and sliced on a mandoline
  • 3 tbsp sugar
  • 3 tbsp white vinegar
  • 1 cup cold water
  • 2 tbsp sour cream
  • 1/4 tspn kosher salt
  • 2-3 sprigs fresh dill finely chopped

Instructions

  • Gather all ingredients before starting recipe.
  • Peel and slice cucumber on a mandolin or a greater with a slicing side.
  • Place sliced cucumber in a bowl and combine with 1/4 tspn kosher salt and after 15 minutes, squeeze out extra juice. Reserve cucumber.
  • Combine 3 tbsp sugar, 3 tbsp white vinegar, 1 cup cold water and 2 tbsp sour creamStir until the sugar has completely dissolved.
  • Combine vinegar mixture with reserved cucumber and chopped dill.
