Ingredients 

  • 15-20 bing cherries all pitted
  • 2 sprigs fresh rosemary stripped from stalk and left whole
  • 2-3 sprigs fresh thyme stripped from stalks, or 1 teaspoon dried
  • 1 orange juice and zest
  • 3-4 tbsp very fine olive oil or enough to nearly cover the olives
  • 2 tbsp balsamic vinegar
  • Kosher salt and freshly ground black pepper

Instructions

Gather all ingredients before starting recipe

  • Defrost and drain bing cherries (if using) and set aside until ready to combine with dressing. Otherwise, pit fresh cherries.
  • Strip 2 stems of rosemary and thyme and add to medium mixing bowl.
  • Zest and juice one whole orange and add, with the olive oil and balsamic vinegar, to the bowl with herbs and cherries. Season with kosher salt and black pepper. Combine well and heat in a microwave safe dish on high for 1 minute.
  • Cover and leave at room temperature for one hour, and up to 5 hours, mixing occasionally to blend the flavors
