I am hopeless with preparing fish….I have mastered a number of recipes for salmon, have dabbled with recipes for black cod, likewise for scallops and shrimp, but when it comes to FISH, I am stymied.
But, last night’s Blackened Tilapia with Pineapple Salsa passed the test. We both got through about 90%, which is remarkable!
I would not serve this meal for a dinner party as it fits in the ‘last minute’ preparation category which I don’t do except for family, but this recipe is noteworthy. Please try it as a week day dinner, as non fish lovers, this passed the test times two!
